Rice is a staple food

Glycemic Index (GI)
is a measure of how rapidly the carbohydrates are
absorbed and result in the elevation of blood glucose
level.
High GI foods are
rapidly absorbed and cause a large rise in blood sugar levels and
generate a demand for insulin. Hence GI food may be eventually
linked with heart diseases, obesity and diabetes. Low GI foods
promote weight management by enhancing satiety and are more
sustaining.

(GL)
The Glycemic Load (GL)
is a relatively new way to assess the impact of carbohydrate
consumption and takes into consideration the active carbohydrate
content per serving of the food in addition to the Glycemic
Index of that food.
A GI value tells how
rapidly a particular carbohydrate turns into sugar but doesn't tell
how much of that carbohydrate is in a serving of a particular food.
We need to know both to understand a food's effect on blood sugar.
This understanding can be obtained from Glycemic Load of the
food.

Most of the cereals and
cereal products have medium to high GL because of higher
carbohydrate content, while most fruits and vegetables have low or
medium GL even though their GI may be high, since carbohydrate
content of these food per serving is low.
It is been found that Glycemic Index of DIA RICE is
around 44, much lower than normal rice, whose GI ranges between 60
to 80 and Glycemic Load of DIA RICE is 8.58 (for a serving of
100g cooked rice) as compared to GL of 13.70 to 18.30 for normal
rice. This low GL is comparable to the GL of other cereals like
wheat and millets generally preferred by Diabetic
People.
